From Jake’s Restaurant
Spring is the perfect time to sip bright craft cocktails on the patio. This frothy cocktail is the marriage of a classic margarita and an Aperol Spritz, by replacing the traditional Triple Sec with Aperol. You could, in theory, replace it with any flavored liquor. Aperol is an Italian Apertif similar to Campari, but much lower in alcohol. It has notes of rhubarb, bitter orange and grapefruit and can be mixed into drinks or simply poured over rocks. Now, rim your glasses with some pink sea salt and get shaking!
Pink Grapefruit Margarita
• 2 oz. Silver Tequila
• 1 1/2 oz. Aperol
• 1 oz fresh squeezed lemon juice
• 1 oz. fresh squeezed lime juice
• 1 oz. simple syrup
• 1 oz egg whites (or approximately 1 large egg white)
• Pink Himalayan Sea Salt for rimming
• Ice
Instructions:
Rim 2 glasses halfway around with lime and pink sea salt. Combine the rest of the ingredients in a shaker with ice and shake, shake, and shake until frothy. Pour into rimmed glasses with ice.
